手擀面用高筋面粉，也可以用中筋面粉，但是不可以用低筋面粉。使用高筋面粉时，做出来的面条筋道好吃，但是擀制的过程中需要用气力比较大；使用中筋粉时擀制，可以加入鸡蛋增加面条的劲道口感。
